This tasty and health veggie lunch packs in 4 of your 5 a day and is great to eat at home or on the go!
Prep time: 20 minutes Cook time: 25 minutes Total time: 45 minutes Servings: 4 Ingredients:
2 x 400g cans of chickpeas
2 tsp olive oil
2 tsp ground cumin
2 tsp smoked paprika
2 large avocados, chopped
Juice of 1 lime
A small handful of coriander, chopped
8 large corn tortillas
1 fresh iceberg lettuce, shredded
150g natural yogurt
480g jar of roasted red peppers, chopped
Instructions 1. Preheat the oven to 220C/200C fan/gas mark 7. 2. Drain the chickpeas and transfer to a large bowl. Add the olive oil, paprika and cumin. Stir the mixture to coat the chickpeas. 3. Transfer the chickpeas to a baking train and roast for 20-25 minutes. 4. While the chickpeas are in the oven, mix the lime juice, avocado, and coriander in a bowl. 5. Warm the tortillas according to packet instructions and add the chickpeas, avocado, peppers, and lettuce. Drizzle with yoghurt and serve!
