Roasted Chickpea Wraps 😋


This tasty and health veggie lunch packs in 4 of your 5 a day and is great to eat at home or on the go!


Prep time: 20 minutes⁠ Cook time: 25 minutes⁠ Total time: 45 minutes⁠ Servings: 4⁠ ⁠ Ingredients:⁠

  • 2 x 400g cans of chickpeas⁠

  • 2 tsp olive oil⁠

  • 2 tsp ground cumin⁠

  • 2 tsp smoked paprika⁠

  • 2 large avocados, chopped ⁠

  • Juice of 1 lime⁠

  • A small handful of coriander, chopped⁠

  • 8 large corn tortillas

  • 1 fresh iceberg lettuce, shredded⁠

  • 150g natural yogurt⁠

  • 480g jar of roasted red peppers, chopped⁠

Instructions⁠ 1. Preheat the oven to 220C/200C fan/gas mark 7.⁠ 2. Drain the chickpeas and transfer to a large bowl. Add the olive oil, paprika and cumin. Stir the mixture to coat the chickpeas.⁠ 3. Transfer the chickpeas to a baking train and roast for 20-25 minutes. ⁠ 4. While the chickpeas are in the oven, mix the lime juice, avocado, and coriander in a bowl. ⁠ 5. Warm the tortillas according to packet instructions and add the chickpeas, avocado, peppers, and lettuce. Drizzle with yoghurt and serve! ⁠
